We all know about courgette (zucchini) fries, French fries and sweet potato fries, but have you heard of asparagus fries? Well, I urge you to go and make these ASAP! And because asparagus is very often served cold, it makes these guys the ideal takeaway snack. Pretty perfect if you ask me!

Ingredients

Quantity Ingredient
100g asparagus spears, woody ends trimmed
2 tablespoons coconut oil, melted
1 teaspoon ground cumin
1 teaspoon paprika
2 tablespoons nutritional yeast
35g gluten-free breadcrumbs
sea salt
freshly ground black pepper

Method

  1. Preheat the oven to 220°C and line a baking sheet with parchment paper.
  2. In a bowl, coat the asparagus spears with the melted coconut oil, followed by the cumin, paprika, nutritional yeast, a good sprinkling of salt and pepper and the breadcrumbs. Spread them out on the baking sheet and sprinkle any of the mixture left in the bowl over the top. Bake for 15 minutes.
  3. Serve immediately or allow to cool and eat them later in the day when you need an energizing snack.
