When I’m working from home, this is my go-to snack every single time. I particularly like this when I need some brain food during my working day. Mushrooms are being hailed as the new kale because of their enormous health benefits and I believe it! So here’s my brain food snack for those days when you really need a nutritional punch in the face…

Ingredients

Quantity Ingredient
30g walnut halves, ground
30g blanched almonds, ground
30g pumpkin seeds, ground
1 teaspoon smoked paprika
1 teaspoon dried oregano
4 tablespoons olive oil
4 large portobello mushrooms, stems and gills removed

Method

  1. Preheat the oven to 220°C and line a baking sheet with parchment paper.
  2. Mix the ground nuts and seeds together in a bowl, add the paprika, oregano and olive oil and mix well. Place the mushrooms, cap side down, on the baking sheet and spoon equal amounts of the filling mixture onto each mushroom. Bake for 10–12 minutes before serving hot.
