I promise you, this is an amazing snack! And it’s so, so easy to make. Put it in an airtight container and use it to top some large lettuce leaves (romaine and chicory work very well). Or spread on crackers and top with some yummy veggies such as sliced avocado or cucumber, radishes, shredded carrots or even sprouts.

Ingredients

Quantity Ingredient
1 large celery stick, roughly chopped
1 spring onion, roughly chopped
1 large garlic clove
130g pumpkin seeds, soaked for 8 hours
2 tablespoons extra virgin olive oil
1 teaspoon dried oregano
1/4 teaspoon sea salt
1/4 teaspoon ground black pepper
1 large lemon, zested and juiced

Method

  1. Blend all the ingredients in a food processor or blender until well combined. Transfer to a bowl and serve, or store in an airtight container for a couple of days.
