There’s guacamole and then there’s my Spacamole! I try to add greens to as many dishes as I can – sort of like trying to ‘hide’ them so people don’t freak out. And this is a perfect example. The lime will help stop the avocado browning throughout the day, making it super easy to take to work in a container along with some carrots, cucumbers and radishes for dipping.

Ingredients

Quantity Ingredient
100g frozen peas
1 avocado, peeled and stoned
handful fresh spinach
1 lime, juiced
1/2 red chilli, chopped
small handful coriander
1/4 cucumber, roughly chopped
1/2 red onion, roughly chopped
vegetable sticks, for dipping

Method

  1. Fill a small pan with water and bring to the boil. Add the peas and boil for 5 minutes. Drain and rinse well.
  2. In a food processor or blender, blend the peas, avocado, spinach, lime juice, chilli, coriander, cucumber and red onion until smooth.
  3. Put in a takeaway container with some vegetable sticks for dipping and have yourself a perfect healthy snack.
