Walnuts are my favourite nuts not only for their taste and the fact that I can use them in pretty much everything from salads to soups and smoothies – and these super snacks – but also because of the added bonus of Omega-3s that other nuts don’t have. That’s what makes walnuts super special.

Ingredients

Quantity Ingredient
50g walnut halves
12 fresh dates, pitted
70g unsweetened desiccated coconut
1 tablespoon chia seeds
1 tablespoon maple syrup

Method

  1. Preheat the oven to 220°C and roast the walnuts on a baking sheet for 10 minutes. Remove from the oven and blitz to a smooth paste in a food processor or blender with the rest of the ingredients.
  2. Transfer to a bowl and use your hands to roll the mixture into 10 balls. Eat immediately or refrigerate for a few hours for a harder texture.
