The lycopene in tomatoes is a natural antioxidant that works to slow the growth of cancerous cells. And guess what – cooked tomatoes produce even more lycopene than their raw counterparts. So go ahead and keep cooking that tomato soup!

Ingredients

Quantity Ingredient
2 x 400g tins chopped tomatoes
2 celery sticks, chopped
150g cherry tomatoes
2 carrots, sliced
200ml vegetable stock
large handful basil, chopped
2 tablespoons honey
sea salt
freshly ground black pepper

Method

  1. Add the chopped tomatoes, celery, cherry tomatoes and carrots to a large saucepan over a medium-high heat and stir for a few minutes before adding the vegetable stock. Continue to cook and stir occasionally for 10 more minutes, lowering the heat after 5 minutes.
  2. Stir in the basil and honey, heat for a few more minutes and then serve in bowls, seasoned with salt and pepper to taste.
