Roasted tomato, sweet potato and chia soup

Sweet potatoes are inexpensive, delicious and readily available all year round. They are also a great source of magnesium, which is the relaxation and anti-stress mineral. So whip up a batch of this for those nights when you need to sleep well.

Ingredients

Quantity Ingredient
3 large tomatoes, halved
olive oil, for drizzling
2 sweet potatoes, peeled and chopped
400ml vegetable stock
2 tablespoons honey
handful coriander, leaves picked and torn, to garnish
1 tablespoon chia seeds, for sprinkling
2 spring onions, thinly sliced

Method

  1. Preheat the oven to 220°C. Place the tomato halves on a baking sheet, drizzle with olive oil and roast for 10 minutes.
  2. While the tomatoes are roasting, boil the sweet potatoes for 10 minutes in a large saucepan of boiling water, then remove, drain and rinse. Tip the drained potatoes back into the pan with the vegetable stock, lower the heat and leave to simmer.
  3. Remove the roasted tomatoes from the oven and add them to the pan along with the honey before blitzing with a stick blender.
  4. Serve in bowls, garnished with the torn coriander leaves and sprinkled with the chia seeds and the sliced spring onions.
