Spinach is one of the most nutritious vegetables around. It’s not only high in vitamins and minerals, but also in phytonutrients, which act as powerful antioxidants to help protect our cells and DNA.

Ingredients

Quantity Ingredient
1 x 400g chopped tomatoes
400ml vegetable stock
1 x 400g cannellini beans, drained and rinsed
1 x 200g kidney beans, drained and rinsed
50g fresh spinach
sea salt
freshly ground black pepper

Method

  1. Add the chopped tomatoes to a large saucepan over a medium heat and simmer for a few minutes before adding the vegetable stock and all the beans. Continue to cook for 7–8 minutes before lowering the heat and adding the spinach leaves.
  2. Stir for a few more minutes before serving in bowls and seasoning with salt and pepper.
