Believe it or not, broccoli contains high levels of calcium and vitamin K, both of which are important for healthy bones and osteoporosis prevention. So, eating broccoli throughout your entire life is a really good thing.

Ingredients

Quantity Ingredient
1 tablespoon coconut oil
2 celery sticks, chopped
1 medium onion, diced
1 teaspoon apple cider vinegar
500g broccoli florets
200ml vegetable stock
150g silken tofu
2 tablespoons pumpkin seeds, for sprinkling
sea salt
freshly ground black pepper

Method

  1. Melt the coconut oil in a heavy-based saucepan over a medium-high heat. Add the celery and onion and fry for 3 minutes. Season with salt and pepper and then add the cider vinegar. Add the broccoli to the pan and cover with just enough boiling water to submerge the florets. Stir in the vegetable stock and leave to simmer for 5 minutes.
  2. Once the broccoli has cooked through, put the whole mixture into a food processor or blender. Add the tofu and blend until completely smooth. Return to the pan to reheat, adjusting the seasoning as necessary.
  3. Serve in deep bowls, sprinkled with the pumpkin seeds.
