Farro is fast gaining attention as the new super ‘grain’ on the block because of its nutritional punch. A very similar texture to rice, farro is a great source of protein, fibre and iron. Make no mistake, this ancient grain is set to make a huge comeback.

Ingredients

Quantity Ingredient
300g cherry tomatoes, halved
3 garlic cloves, minced
1 small onion, diced
100g farro
1 x 400g chickpeas, drained and rinsed
large handful rocket
large handful fresh spinach
handful basil
sea salt
coconut oil, melted, for roasting

Method

  1. Preheat the oven to 200°C and line a baking sheet with parchment paper. Place the tomatoes, garlic and onion on the baking sheet and drizzle some coconut oil over the top. Roast for 15 minutes.
  2. Meanwhile, bring a pan of water to the boil, add the farro and cook a few minutes, then reduce the heat to a simmer and leave to cook for 15 minutes. Remove from the heat and drain away any excess water, then tip the chickpeas into the pan and stir well to combine. Add in the rocket and spinach and stir again.
  3. Serve the farro mixture on plates, topped with the baked tomatoes, garlic and onion, garnished with the basil and seasoned with a sprinkling of salt.
