When you want a quick meal, this is the way to go. I love this bowl because it’s also very pretty. It’s a rainbow of different colours, and as we know, it’s a good thing when we eat a rainbow of different foods.

Ingredients

Quantity Ingredient
1 large sweet potato, peeled and cut into chunks
1 tablespoon coconut oil
90g broccoli florets
1 onion, diced
1 x 400g tin black beans, drained and rinsed
120g sweetcorn
6 cherry tomatoes
1 teaspoon ground cumin
handful fresh spinach
olive oil, for drizzling

Method

  1. Bring a medium pan of water to the boil and add the sweet potato chunks.
  2. Meanwhile, heat the coconut oil in a frying pan and fry the broccoli with the onion and the black beans, cooking for a few minutes, stirring occasionally. Add the sweetcorn and cherry tomatoes before sprinkling the cumin on top.
  3. Continue cooking both pans for a further 5 minutes and then drain the sweet potato and add it to the pan with the broccoli. Stir together and then serve in bowls with the spinach on top, drizzled with olive oil.
