Tofu and kale scramble

Growing up I definitely had my fair share of scrambled eggs for lunch and this, for me, is just a better version of it, especially with the kale and turmeric – my favourite green and my favourite spice. For a heartier lunch, add a corn tortilla for your ‘bread/grain’ option.

Ingredients

Quantity Ingredient
1 tablespoon coconut oil
1/2 red onion, diced
250g firm tofu, drained and crumbled
1/2 teaspoon ground turmeric
150g kale
100g pitted olives, sliced
sea salt
freshly ground black pepper
sliced avocado
cherry tomatoes, to serve, optional

Method

  1. Heat the coconut oil in a frying pan and cook the onion until it begins to brown. Add the tofu to the pan and use a spatula to mash it until it is broken down well, then add the turmeric. Continue to stir as you add the kale. Once the kale begins to wilt, add the olives.
  2. Mix everything together well and season with salt and pepper before serving, topped with sliced avocado and cherry tomatoes, if using.
