This breakfast pudding has just the right amount of sweetness – not so much to rapidly spike that blood sugar, but just enough to satisfy a sweet tooth AND keep blood sugar at a perfect level until lunchtime. Oh, and yes it’s great that oats are a nutritional powerhouse, but I love them even more because they cook FAST! Just what I need for super-hectic mornings.

Ingredients

Quantity Ingredient
35g rolled oats
80ml coconut milk
60ml water
1 teaspoon ground cinnamon
1 teaspoon maca or lucuma powder
1 fresh date, pitted and finely chopped
1 tablespoon unsweetened desiccated coconut
1 tablespoon raisins
1 tablespoon almonds, chopped

Method

  1. Place the oats, coconut milk, water, cinnamon, maca or lucuma powder and the chopped date into a small saucepan and cook over a medium heat until thick and creamy – this should take about 7 minutes.
  2. Pour into a bowl and top with the shredded coconut, raisins and almonds.
