Think of this one as a much healthier alternative to Huevos Rancheros, yet in my opinion JUST AS GOOD! And if you’re looking for protein in the morning, then look no further, as the tofu and black beans provide a hefty dose. This is one of my favourite breakfast recipes on a lazy weekend – well, before I chauffeur my kids around to their various activities!

Ingredients

Quantity Ingredient
3 tablespoons olive oil
1/2 small red onion, chopped
1/2 red pepper, seeds removed and chopped
1 garlic clove, minced
225g extra-firm tofu, drained and crumbled
1 teaspoon ground coriander
1 teaspoon ground cumin
1/4 teaspoon chilli powder, optional
200g black beans, drained and rinsed
handful coriander, roughly chopped
1 lime, zested and juiced
2 corn tortillas
large scoop coconut or soya yogurt
sea salt
freshly ground black pepper

Method

  1. Place a large frying pan over a medium-high heat and coat with the olive oil. Sauté the chopped onion and pepper for 2 minutes, or until soft. Add the garlic and cook for another minute. Add the crumbled tofu, ground coriander, cumin, chilli powder and a pinch of salt and pepper, and mix to combine. Sauté for a few minutes and then add the black beans. Mix together well and cook for another minute or so.
  2. Remove the pan from the heat and add the fresh coriander and the lime zest and juice. Serve in the corn tortillas and top with a spoonful of yogurt.
