I always think the ‘B’ in brown rice stands for vitamin B because, of all the grains, brown rice contains the most of this important vitamin. So on those days when you feel like you need a vitamin B injection, this is the bowl for you.

Ingredients

Quantity Ingredient
200g brown rice
720ml vegetable stock
2 large handfuls pitted black or kalamata olives, roughly chopped
2 tablespoons olive oil
90g walnut halves
small handful dill
1/2 teaspoon chilli flakes
1 lemon, juiced
2 tablespoons honey
50g dried cranberries
4 spring onions, chopped
sea salt
freshly ground black pepper

Method

  1. Bring the brown rice and stock to the boil in a saucepan over a medium-high heat. Boil until the rice is tender and cooked, about 15 minutes. Drain off any excess water, if necessary.
  2. Meanwhile, place the olives in a bowl with the rest of the ingredients. Season, stir well and refrigerate until the rice is cooked.
  3. Combine the rice and olive and walnut mixture, stir well and eat well, too!
