I truly believe it when I read that mushrooms have medicinal qualities. One of their superhero properties is vitamin D, and it’s the only vegetarian food source of this vital vitamin. Considering that vitamin D deficiency is thought to be quite widespread in the western world, this is a great way to get it through your food.

Ingredients

Quantity Ingredient
250g uncooked soba noodles
2 tablespoons coconut oil
1 onion, finely sliced into half moons
2 garlic cloves, crushed
125g oyster mushrooms
125g shiitake mushrooms
125g baby pak choi
2 tablespoons miso paste
2 tablespoons tamari or soy sauce
2 teaspoons chilli flakes
2 spring onions, chopped
2 tablespoons black sesame seeds
sea salt
freshly ground black pepper

Method

  1. Firstly, prepare the soba noodles according to the packet instructions.
  2. Meanwhile, melt the coconut oil in a medium frying pan over a medium-high heat and cook the onion and garlic for 5 minutes until soft. While they are softening, clean and slice the mushrooms, then add them to the pan with a pinch of salt and pepper and continue to fry for 5 minutes.
  3. While the mushrooms are cooking, slice the pak choi, then add it to the pan and fry for another 5 minutes. Add the miso, tamari or soy sauce and chilli flakes and fry for 1 more minute. Finally, add the drained cooked soba noodles and sprinkle the spring onions and black sesame seeds over the top.
  4. Divide between four bowls and serve!
