Spicy tofu tacos

For ‘Meatless Mondays’, this is one of my favourite dishes. You can make this as spicy as you want or you can just as easily leave out the spice altogether. You’ve got whole grains from the corn tortilla, protein from the tofu and a good amount of veggies, too.

Ingredients

Quantity Ingredient
2 tablespoons coconut oil
1 large red onion, diced
2 garlic cloves, crushed
1 red pepper, seeds removed and finely sliced
1 yellow pepper, seeds removed and finely sliced
250g firm tofu
1 x 400g tin black beans, drained and rinsed
2 green chillies, seeds removed and roughly chopped
1 teaspoon chilli powder
1 teaspoon cayenne pepper
2 limes
large handful coriander, roughly chopped
2 spring onions, chopped
sea salt
freshly ground black pepper

To serve

8 corn tortillas
coconut or soya yogurt, optional

Method

  1. In a large frying pan over a medium-high heat, melt the coconut oil, add the onion, garlic and red and yellow peppers and then cook for about 3 minutes, stirring occasionally.
  2. Crumble the tofu into the pan and stir, scraping the bottom of the pan when needed. After 10 minutes, add the black beans, green chillies, chilli powder and cayenne. Stir well and continue to cook for 2 minutes. Season to taste.
  3. Squeeze the lime juice into the pan, sprinkle with the coriander and spring onions and serve with the corn tortillas, topping with the yogurt, if using.
