When my mum made chocolate chip cookies, I would plead with her to let me lick the bowl. Why? Because the dough was so, so good! But my mum also had a special way of baking the cookies. She took them out of the oven a couple of minutes early so that they’d be super soft, moist and practically like the dough from the bowl. Here’s my version of semi-cooked dough balls – sweet, soft and super!

Ingredients

Quantity Ingredient
120g oats
120g buckwheat flour
1 tablespoon melted coconut oil
6 medjool dates, pitted and chopped
1 tablespoon honey
1 tablespoon maple syrup
1 tablespoon raw cacao powder
1 tablespoon ground flaxseed, soaked in 3 tablespoons warm water

Method

  1. Preheat the oven to 220°C and line a baking sheet with parchment paper.
  2. In a bowl, mix together the oats and flour.
  3. In another bowl, mix together the coconut oil, honey, maple syrup and cacao before adding in the flaxseed mixture. Stir well and then pour into the bowl with the oats and flour. Mix until everything combines together well and then tip in the dates.
  4. Roll the mixture into 24 small balls and place on the prepared baking sheet. Bake for 10–12 minutes until the balls begin to brown and then remove them from the oven. Cool and serve.
