As you can probably tell from this cookbook, I love almond butter! Growing up in America, peanut butter cookies were all the rage. I don’t even think I knew what almond butter was back then. But now, here we are, and almond butter is the new peanut butter! So, here’s a healthy twist on a super classic.

Ingredients

Quantity Ingredient
150g ground almonds
50g buckwheat flour
4 tablespoons honey
4 tablespoons coconut oil, melted
3 tablespoons almond butter, plus a little extra for spreading, optional
1 tablespoon chia seeds, soaked in 3 tablespoons water
1 teaspoon ground cinnamon
1/4 teaspoon baking powder

Method

  1. Preheat the oven to 180°C and line a baking sheet with parchment paper.
  2. Combine all the ingredients in a bowl, then use your hands to roll the mixture into 12 even-sized balls. Press each ball onto the prepared baking sheet, spacing them evenly apart. Bake for 10 minutes, then remove and allow to cool before eating.
  3. These cookies are delicious with a little extra almond butter spread on top.
