I love the smell of cookies baking in the oven and these ones don’t hold back. You can literally smell the sweet scent of cinnamon while the cookies are rising. I like to think of these as not only delicious but a great way to incorporate more goji berries into your diet – and if you have kids, well, these go down a treat!

Ingredients

Quantity Ingredient
200g coconut palm sugar
1 large soft banana, mashed
2 tablespoons chia seeds, soaked in 6 tablespoons water for 5 minutes
4 tablespoons melted coconut oil
1 teaspoon vanilla extract
1 teaspoon lucuma powder
160g quinoa flour
1/2 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
1 teaspoon ground cinnamon
30g goji berries
120g oats

Method

  1. Preheat the oven to 200°C and line a baking sheet with parchment paper.
  2. Combine the coconut palm sugar and banana in a large bowl. Mix in the chia seed gel, melted coconut milk, vanilla and lucuma powder. Stir in the flour, baking powder, bicarbonate of soda and ground cinnamon. Finally, add the goji berries and oats.
  3. Using your hands, take small balls of the dough and press down into cookie shapes on the prepared baking sheet. Bake for 10 minutes or until golden brown.
