My kids love these and I do to – maybe just a bit too much, as I sometimes eat the whole batch! Most shop-bought blondies are filled with a ton of refined sugar and so here is a much healthier version that’s jam-packed with all things good!

Ingredients

Quantity Ingredient
2 tablespoons ground flaxseed, soaked in 4 tablespoons warm water
50g coconut oil, melted
100g coconut palm sugar
4 tablespoons honey
1 teaspoon sea salt
130g buckwheat flour
50g blanched almonds, roughly chopped
1 teaspoon vanilla extract

Method

  1. Preheat the oven to 200°C. Line the baking tin with parchment paper.
  2. In a medium bowl, add the flaxseed mixture, melted coconut oil, coconut palm sugar, honey and salt and mix well. Add the buckwheat flour and mix again. Lastly, add the almonds and vanilla extract. Spread the mixture evenly into the pan and bake for 15 minutes. The blondies will come out quite soft and gooey but that, for me, makes them even better!
  3. Cut into 12 bars and enjoy!
