This recipe is a definite favourite of my kids’, not only because the bars taste so good but also because they’re super easy to make. I can actually give this recipe to any of my kids and they can whip it up in no time. It needs no baking! Incidentally, use any nuts you want. I’ve used walnuts and cashews, but almonds, pistachios and hazelnuts are all good choices, too!

Ingredients

Quantity Ingredient
100g oats
75g cashews
65g walnut halves
1 tablespoon raw cacao powder
100ml plant-based milk of your choice
3 tablespoons maple syrup
1 teaspoon vanilla extract

Method

  1. Line the baking tin with parchment paper.
  2. Put all the ingredients in a food processor and blend until well combined.
  3. Spoon the mixture into the prepared baking tin and place in the freezer for 12 minutes to set. Remove and cut into 12 bars.
