'Cheesy’ Kale Crisps with lime

King kale is being hailed as the veggie lover’s beef, as gram for gram, it has more iron than beef. But more than that, kale is low calorie, high in fibre and has zero fat. And kale isn’t just for smoothies or salads any more… You CAN have your crisps and eat them too, albeit a much healthier version!

Ingredients

150g kale
2 tablespoons coconut oil, melted
1 teaspoon coconut palm sugar
1 teaspoon ground flaxseed
1/2 teaspoon sea salt
1/2 lime, juiced
50g nutritional yeast

Method

  1. Preheat the oven to 180°C. Remove the stalks and thick veins from the kale and tear them into small pieces. Put the kale in a bowl and drizzle over the melted coconut oil. Mix well, then use your hands to massage the oil into the kale for a few minutes to tenderise the leaves.
  2. Add the coconut palm sugar, flaxseed, sea salt, lime juice and nutritional yeast and mix well.
  3. Transfer the kale to a large baking tray and bake in the preheated oven for 30 minutes or until golden and slightly crispy. Take out of the oven and loosen the kale with a spatula. Turn the oven off and stick the tray back in for another 20 minutes, which allows it to become even crispier.
  4. My kale crisps usually get eaten straightaway but you can store them in an airtight container for up to 1 week.

Note

  • Not only do limes contain a high amount of vitamin C, they also contain flavonoids that help to protect the eyes from aging and from infections.
