Oh algae, you are the new kid on the block. Well, actually you are one of the oldest life forms on the planet, but we’ve only recently discovered you are incredibly beneficial to our health. Spirulina is an algae powerhouse of nutrients unlike any grain, plant or fruit. That’s why I love to incorporate it, not only in my smoothies, but also in these good-to-go bite-sized bursts of health.

Ingredients

Quantity Ingredient
45g rolled oats
75g cashews
150g dried figs
2 tablespoons desiccated coconut
1/2 teaspoon vanilla extract
1 lemon, zested
4 tablespoons lemon juice
2 teaspoons spirulina powder
2 tablespoons tahini
2 tablespoons water

Method

  1. Put the oats in a blender or food processor and blitz into fine crumbs. Add the remaining ingredients and blend until smooth.
  2. Transfer the mixture to a mixing bowl and use your hands to roll into walnut-sized balls.
  3. Store in an airtight container in the fridge for up to 2 weeks.

Note

  • Figs contain more calcium than most other fruits. In fact, one serving of dried figs equals 12 percent of your RDA for calcium.
