Homemade pesto is so delicious! My 13-year-old son, Jack, is obsessed with pesto and would be very, very happy if he could have it every night for supper! So, this twist on the same old basil, pine nut and olive oil combination brought a huge smile to his face and I think it will bring one to yours, too.

Ingredients

500g wholegrain pasta

For the pesto

Quantity Ingredient
2 large handfuls fresh basil, leaves only
100g macadamia nuts
1 tablespoon nutritional yeast
1 garlic clove
100ml olive oil
large handful fresh flat-leaf parsley, leaves only

Method

  1. Put all the pesto ingredients in a food processor and whizz together until you achieve the consistency of your choice.
  2. Cook the wholewheat pasta according to the packet instructions until al dente. Stir the pesto through and serve immediately.

Note

  • Although they are one of the most calorific nuts, macadamias contain the highest amount of hearthealthy monounsaturated fat per serving, which helps to lower bad ‘LDL’ cholesterol.
