Mixed bean, avocado and Clementine salad with tahini dressing

Tahini is one of my favourite ingredients to use when I’m making a dressing. It provides a creamy texture and sweet, nutty flavour and is great over any roasted vegetables or salad. This protein-packed side dish goes perfectly with an oily fish like tuna, salmon or mackerel, or with my Red Peppers Stuffed with Bulghur Wheat and Pistachios.

For the bean salad

Quantity Ingredient
1 x 400g tin mixed beans, drained and rinsed
100g green beans, cooked
2 handfuls flaked almonds, lightly toasted
1 head romaine lettuce, chopped
1 large avocado, peeled, pitted and sliced
2 clementines, peeled and segmented
1 yellow pepper, chopped
large handful fresh coriander, chopped

For the tahini dressing

Quantity Ingredient
2 tablespoons tahini
2 tablespoons apple cider vinegar
2 tablespoons tamari
2 tablespoons lemon juice
1 tablespoon raw honey

Method

  1. For the salad, simply combine all the ingredients in a large bowl.
  2. The dressing is just as easy! Combine all the dressing ingredients in a small mixing bowl and whisk together by hand. Pour the dressing over the bean salad and toss well, then serve.

Note

  • Green beans contain excellent levels of vitamin A, which is known to help combat wrinkles, fine lines and age spots.
