This is a brilliantly easy recipe that you can whip up in no time. It’s completely raw, which means that all the crucial enzymes that we need are kept intact and greatly appreciated by our bodies. Top some steamed fish with this salad for some texture and yumminess, or use it as a salsa and pair it with my Adzuki and Quinoa Tex-Mex Casserole.

Ingredients

Quantity Ingredient
1 large pomegranate
1 small cucumber, chopped
4 large tomatoes, cut into chunks
1 hot red chilli, deseeded and thinly sliced
1 red pepper, chopped
large handful fresh mint, roughly chopped
large handful fresh coriander, roughly chopped
1 lime, juiced
drizzle olive oil

Method

  1. Cut the pomegranate in half and get your fingers in there to prise all of the seeds free. Ensure that you pull away and discard all the pith as you go.
  2. Mix the cucumber, tomato, chilli, red pepper, mint and coriander together in a bowl. Add the pomegranate seeds, then add the juice of the lime and a drizzle of olive oil and toss everything together. Yes, it’s that simple and it’s super-yummy.

Note

  • This so straightforward; the only thing likely to take time is getting the seeds out of the pomegranate! When you’ve cut it in half, hit the fruit with a utensil to dislodge the seeds.

Note

  • Cucumbers are 95 percent water, which helps to keep our bodies hydrated while at the same time eliminating toxins.
