Quinoa and sautéed red cabbage with oranges

You can’t log on to a healthfood website without reading about the benefits of quinoa – it’s everywhere! However, you might not be so familiar with the benefits of red cabbage. This variety of cabbage actually contains a great deal more phytonutrients than green cabbage… so eat up! This dish is perfect as a Sunday lunch accompaniment to roast chicken, or try it with my Mung Bean, Sweet Potato and Pomegranate Casserole for a plant-based Sunday lunch.

Ingredients

1 litre vegetable stock
400g mixed red and white quinoa
2 bay leaves
2 tablespoons coconut oil
1/2 tablespoon black mustard seeds
1 tablespoon fennel seeds
2 onions, chopped
4 garlic cloves, finely chopped
1/2 red cabbage, thinly sliced
2 tablespoons apple cider vinegar
4 oranges
small handful fresh flat-leaf parsley, chopped
sea salt
freshly ground black pepper

Method

  1. Bring the vegetable stock to the boil in a large saucepan and add the quinoa and bay leaves. Reduce the heat to low and simmer for 20–25 minutes until the water has been absorbed and the quinoa is tender.
  2. Melt the coconut oil in a frying pan and fry the black mustard seeds with the fennel seeds. After 3 minutes, add the onions and garlic and fry for 5–7 minutes until the onion has softened. Add the cabbage and apple cider vinegar and continue to fry for another 5 minutes.
  3. Meanwhile, juice 3 of the oranges and segment the last one. Strain the juice into the pan with the red cabbage. Stir well and season with salt and pepper.
  4. Put the quinoa in a large bowl and top with the cabbage, orange segments and chopped parsley.

Note

  • Red cabbage has a high content of anthocyanins, a type of flavonoid that has been linked to cancer prevention.
