When you’re running out of time but need a dinner-party dessert or something to whip up for the kids’ pudding, then this is your go-to smash hit. Your guests will be shocked that this scrumptious dish is actually filled with fabulously healthy ingredients.

Ingredients

Quantity Ingredient
2 avocados, peeled, pitted and chopped
6 dates, pitted and roughly chopped
80g cacao powder
160ml coconut milk, (or a plant-based milk of your choice)
1 teaspoon vanilla extract
1 tablespoon lucuma powder
pinch sea salt
raspberries, to serve (optional)

Method

  1. Simply combine all the ingredients in a food processor and whizz to a creamy mousse. Scoop out into a serving bowl, chill in the fridge for at least 1 hour. Serve in lovely small bowls or cups topped with raspberries, if using.

Note

  • Lucuma is a great sweetener that is low on the glycemic scale and full of nutrients, such as iron, zinc, beta-carotene and calcium.
