190g sugar
10g vanilla sugar
4 eggs
240g plain flour
6g baking powder
50g milk
125g unsalted butter, melted

Method

  1. Making the batter

    In a mixing bowl, combine the sugar, vanilla sugar and eggs. Sift in the flour and the baking powder and stir to incorporate. Add the milk, then the melted butter and stir to combine.
  2. Baking

    Preheat the oven to 190ºC. Lightly grease two madeleine moulds. Pour the batter into the moulds and bake for 7 minutes. Turn out as soon as they come out of the oven. Madeleines can be stored for up to 1 week in an airtight container.

Chef’s tip :

  • To give your madeleines a rounded ‘hump’, quickly open and close the oven door once when the madeleines are cooked around the edges but not yet in the centre.
