Ingredients

Quantity Ingredient
220g unsalted butter, softened
80g icing sugar
A pinch sugar
1 egg
280g plain flour
30g unsweetened cocoa powder
70g whole blanched pistachio nuts

Method

  1. Making the biscuit dough

    Combine the butter, icing sugar and salt in a mixing bowl. Add the egg, then sift in the flour and cocoa. Fold through the pistachio nuts, then place the dough in the refrigerator for 1 hour.
  2. Baking the buscuits

    Preheat the oven to 190ºC. When the dough is firm enough, shape it into a large sausage and use a sharp knife to slice into individual biscuits 5 mm thick. Arrange the biscuits on baking trays lined with baking paper and bake for 12 minutes.
