Ingredients

For the pistachio ice-cream

600g milk
30g skim milk powder
50g single cream
140g sugar
20g honey
3 egg yolks
100g PistachIo paste
70g Calissons, chopped
30g pistachio nuts, chopped

For coating

400g good-quality milk cooking chocolate
40g sunflower oil
chopped pistachio nuts

silicone popsicle moulds or tubes
wooden sticks
sugar thermometer
ice-cream machine
piping bag fitted with a wide nozzle
strainer or sieve
blender

Method

  1. Making the ice-cream

    Put the milk in a saucepan and heat until it reaches 40°C on a sugar thermometer. Add the skim milk powder, cream, sugar, honey, egg yolks and pistachio paste. Continue to heat the mixture until it reaches 83°C, then remove from the heat and strain. Transfer the mixture to a blender and blend for 1 minute. Refrigerate until chilled.
  2. Assembling the popsicles

    Churn the ice-cream in an ice-cream machine according to the manufacturer’s instructions. Once it has frozen, fold through the calissons and pistachio nuts. Using a piping bag fitted with a wide nozzle, pipe the ice-cream into the popsicle moulds and insert a wooden stick into each popsicle. Freeze overnight to set. Remove the moulds before coating.
  3. Coating the popsicles

    Melt the chocolate over a saucepan of boiling water. When it reaches 35°C, remove from the heat, add the sunflower oil and stir to combine. Dip each popsicle in the chocolate to coat, then remove it immediately and drain. Sprinkle over the chopped pistachio nuts. Wait for the chocolate to completely set before laying the popsicles down. Return to the freezer or enjoy straight away!

  • Plastic moulds with sticks are readily available (sometimes in funny shapes like rockets to amuse children).
