Clarified butter has had the milk solids removed, which means it can be heated to a higher temperature, without the risk of burning.

Ingredients

250g unsalted butter

Method

  1. Put the butter into a small heavy-based saucepan and heat gently until completely melted. Keep at a constant temperature over a very low heat until the milk solids fall to the bottom of the pan. Ladle the clear liquid butter through a sieve lined with muslin and allow the clarified butter to set. Store in the refrigerator for up to 2 weeks.
