Rub the inside of your mixing bowl with a clove of garlic before tossing the salad. It adds a gentle touch of garlic, without being overpowering.

Ingredients

Quantity Ingredient
80ml freshly squeezed lemon juice
lemon juice
sugar
120ml extra-virgin olive oil
100ml virgin olive oil
salt
freshly ground pepper

Method

  1. Put the lemon juice into a mixing bowl with the sugar, salt and pepper. Whisk to dissolve then whisk in the two oils. Taste and adjust the balance of seasonings to your preference.
