Ingredients

60ml non-scented cooking oil
2kg pork shoulder, cut into dice
100g unsalted butter
10 shallots, finely sliced
6 garlic cloves, finely sliced
2 sticks celery, finely sliced
1 large granny smith apple, finely chopped
3 sprigs thyme
200ml white wine
3 litres Brown pork stock
2 sprigs marjoram
salt
freshly ground pepper

Method

  1. Heat a large roasting tray over a high heat. Add the oil and then the pork and sear until lightly browned all over. Add the butter and heat to a nut-brown foam. Lower the heat and sauté for around 6 minutes, moving the pork around in the pan so that it caramelises a deep golden-brown all over.
  2. Tip the contents into a colander to drain and reserve the fat. Put the meat into a large saucepan and tip the drained fat back into the baking tray. Add the shallots, garlic and celery and cook over a medium heat until they start to caramelise. Add the apple and thyme and cook until everything has caramelised a deep golden-brown. Carefully drain off any excess fat.
  3. Deglaze the pan with the white wine, being sure to scrape up all the sticky sediment from the bottom of the pan. Simmer until reduced to a sticky syrup then tip everything into the saucepan with the pork.
  4. Add the pork stock and bring to a simmer slowly, skimming to remove any fat or sediment that rises to the surface. Lower the heat and simmer gently for about 20 minutes, skimming frequently. Remove from the stove and add the marjoram. Leave to infuse for 5 minutes then pour through a chinois or fine sieve. Tap the sieve lightly; don’t press the contents to extract more liquid as it will make the jus cloudy and grainy. This jus is at its best used on the same day, but will keep up to 2 days in the refrigerator or for a month in the freezer.
