Serve the peeled roasted garlic cloves whole as a garnish, or pound them gently in a mortar to make a garlic purée.

Ingredients

Quantity Ingredient
garlic
thyme
rosemary
1 bay leaf
30ml olive oil
salt
freshly ground pepper

Method

  1. Preheat your oven to 160°C. Break the head of garlic into individual cloves leaving the skins intact.
  2. Heat an ovenproof frying pan until very hot. Add the garlic cloves with the herbs, oil and seasoning and toss together well. Transfer to the oven and roast for 40 minutes until the garlic cloves are golden-brown and very soft.
  3. Remove from the oven, peel the garlic cloves and serve immediately.
