Although I don’t tend to use many Asian ingredients in my cooking, I love this wonderful vinaigrette, which is a Dietmar Sawyer recipe.

Ingredients

Quantity Ingredient
2 teaspoons grated ginger
1 teaspoon finely chopped garlic chives
1 teaspoon finely chopped chilli
2 tablespoons sesame oil
4 tablespoons peanut oil
2 tablespoons soy sauce
1 teaspoon finely chopped pickled ginger
1 teaspoon pickled ginger juice
pinch sugar
freshly squeezed lime juice, to taste
few sprigs vietnamese mint leaves, finely chopped

Method

  1. Put all the ingredients into a mixing bowl and whisk together. Taste and adjust the balance of seasonings to your preference.
