1 quantity Brioche
Light caramel syrup, to serve

Method

  1. Start by making the brioche dough as per the recipe. However, before you knock the dough back for the first time, stir in 2 cups of mixed dried fruit and candied peel. Then proceed as described.
  2. When ready to bake, preheat oven to 180ºC. Divide the dough into 8 portions, roll each into a small ball and place in lightly buttered dariole moulds to bake. Bake in an oven for about 20 minutes. Serve the puddings warm, drizzled with light caramel syrup, and with a generous scoop of Armagnac and caramel ice cream.
