The classic Provençal snack, pissaladière, is the French equivalent of pizza. Vary the toppings depending on what you’ve got lurking in the refrigerator. Sun-dried tomatoes and olives, rosemary and red onions, artichokes and anchovies – all these Provençal-style toppings are great.

Ingredients

Quantity Ingredient
100g Lyonnaise onions
50g anchovies
1/2 cup black olives
olive oil
1 quantity Basic yeast dough

Method

  1. Prepare the basic yeast dough as per the recipe, but do not bake.
  2. Spread the onions onto the prepared dough in a thick layer. Arrange the anchovy strips across the surface to form a diamond pattern and stud each diamond with an olive. Drizzle with olive oil and bake for 20 minutes at 180ºC until the base is crisp and golden brown.
