Sometimes called friands, these little cakes are made with ground almonds and beurre noisette, which gives them a lovely toasted nut flavour. They are traditionally baked in little oval or rectangular shapes.

Ingredients

Quantity Ingredient
125g Beurre noisette
75g ground almonds
60g plain flour
150g sugar
4 egg whites, at room temperature

Method

  1. Gently heat the beurre noisette to around 50ºC.
  2. Mix together the dried ingredients then stir in the egg whites. Gradually stir in the melted butter until smooth. Cover and refrigerate for 2 hours.
  3. When ready to bake the financiers, preheat your oven to 210°C. Grease 2 financier tins or mini muffin pans and dust lightly with flour.
  4. Spoon the batter into the moulds, so that they are three-quarters full. Bake for 5 minutes until firm and golden brown. Remove from the oven and leave to cool in the tins for a few minutes. Turn out onto a wire rack and eat while still warm. Financiers are best eaten on the day they are made, but will keep in an airtight container for up to 3 days.
