Ingredients

Quantity Ingredient
100g plain flour
100g icing sugar
3 egg whites
100g butter, melted

Method

  1. Sift the flour and sugar together into a large mixing bowl. Lightly whisk the egg whites then stir into the flour and sugar. Stir in the melted butter until smooth. Cover and refrigerate for 2 hours.
  2. When ready to bake, preheat your oven to 170°C. Line a baking sheet with a silicone baking mat or baking paper. Using a teaspoon, place small balls of the mixture on the prepared sheet and smear the mixture out as thin as you can. For a perfect look, you can create a simple template using the lid of a plastic ice cream container. Use a Stanley knife to cut a circle – or any shape you like.
  3. Bake for 6–10 minutes, until golden brown. Leave for a few seconds before lifting the tuiles off with a spatula. They will crisp up as they cool.
  4. To shape the tuiles, while warm from the oven, drape them over a rolling pin to form curls or over the bottom of a glass to form baskets.
