This is one of my favourite ways of cooking eggs: it’s sort of a cross between poaching and baking. The eggs are cracked into little dishes of rendered duck fat and baked until just set. The result: a superb melting texture and flavour enriched by the duck fat. A few shavings of fresh truffle would be the perfect luxurious finishing touch.

Ingredients

300ml duck fat, rendered
4 free-range eggs
12 asparagus spears
salt
Beurre noisette, rosemary and truffle variation
1 tablespoon parsley, chopped
1 Cured duck ham, finely sliced
or pancetta, finely sliced
pepper

Method

  1. Preheat your oven to 180°C then turn heat down to 90°C. Pour the rendered duck fat into 4 ramekin dishes and heat in the oven.
  2. Meanwhile, heat an ovenproof frying pan over a moderate heat. Add the extra duck fat and sauté the asparagus for a few moments, tossing gently in the fat. Season generously and transfer to the oven to roast for 3–5 minutes, until golden but still quite firm.
  3. Gently warm the beurre noisette in a small saucepan and add the chopped parsley.
  4. Crack the eggs into the ramekins, and cook in the oven for about 6 minutes, until just set – or longer if you prefer your eggs firmer. To serve, divide the roasted asparagus between 4 warmed serving plates. Arrange an egg on top and scatter over a few slices of duck ham. Finally, drizzle on a little of the beurre noisette and serve immediately.
