Ingredients

Quantity Ingredient
100g wet salt
20g brown sugar
1 lime
2 stalks fresh coriander
1/2 cinnamon stick
2 garlic cloves
4 sprigs thyme
15g fresh ginger
2 star anise
6 coriander seeds
4 cloves

Method

  1. Place the salt and sugar in a mortar. Grate the lime onto the salt and sugar, making sure you capture all the spray and oils released by the fruit. Squeeze the lime and add the juice to the mix.
  2. Add the remaining ingredients and pound with the pestle until crushed and aromatic.
  3. This salt will keep in an airtight container in the refrigerator for up to 2 weeks.
