This selection is my preferred combination, but vary the quantities according to your own taste.

Ingredients

Quantity Ingredient
3 sprigs parsley
2 sprigs thyme
1 bay leaf
1 stick celery
1 piece leek

Method

  1. Tie the herbs and vegetables together with a piece of string. I like to wrap the piece of leek around the stalks and tie the string around it. Sometimes I even place a piece of streaky bacon on top of the leek and tie it all up together. Alternatively, tie everything up in a small muslin bag.
  2. Use immediately, or store in the refrigerator for up to 3 days.
