Ingredients

Quantity Ingredient
1kg fresh cherries, pitted
2 litres red wine
1 litre ruby port
1 cinnamon stick
3 star anise
6 cloves

Method

  1. Place all ingredients in a heavy-based saucepan and bring to the boil over a moderately high heat. Lower the heat and simmer for 45 minutes, until the liquid has reduced enough to just cover the cherries. It should have an intensely spiced aroma.
  2. Allow to cool before tipping into a large sterilised Kilner jar. The bottled cherries will keep in the fridge for 1 month.
