Ingredients

Quantity Ingredient
100g wet salt
30g sugar
1 lime
1 orange
1 lemon
4 coriander seeds
2 peppercorns

Method

  1. Place the salt and sugar in a mortar, and grate the citrus fruits over. Add the coriander seeds and peppercorns and pound with the pestle until crushed and aromatic. This salt will keep in an airtight container in the refrigerator for up to 2 weeks.
