Fruit salads are light and refreshing, with a pleasing balance of sweetness, perfume and acidity. Always choose fruit in peak condition – and don’t just limit yourself to the stock-standards. This salad is lovely with 2–3 tablespoons of pomegranate seeds.

Ingredients

Quantity Ingredient
1 papaya
1 mango
12 lychees
1 young coconut
4 passionfruit
250ml lime syrup

Method

  1. Prepare all the fruits, removing peel, seeds and stones as appropriate. Cut the papaya, mango, lychees and coconut into even slices and place in a large mixing bowl. Cut the passionfruit in half, scoop out the seeds and add them to the bowl. Add the lime syrup and toss together gently. Garnish with pomegranate seeds before serving.
