Method

  1. Preheat the oven to 120ºC. Line 2 baking sheets with a silicone baking mat or baking paper and draw on 10 cm circles to act as a template.
  2. Spoon the French meringue into a piping bag and pipe in concentric circles to fill the drawn circle. Pipe another ring on the outer edge of each disc to create a basket.
  3. Bake for 1½ hours until the vacherins are ivory and crisp. Leave to cool for 10 minutes before carefully lifting them onto a wire rack to cool completely. When ready to serve, fill with flavoured crème chantilly and macerated berries.
