Ingredients

75g sugar
25g butter

Method

  1. Put the sugar in a heavy-based saucepan and heat gently until the sugar has completely dissolved. Increase the heat and bring to the boil, then simmer to a medium caramel.
  2. Remove the pan from the heat and whisk in the butter. Pour into a greased baking tray and leave to cool. When it has set hard, break into pieces and blitz in a food processor to a fine powder. Store in an airtight container in a cool, dry place for up to 3 weeks.
