Ingredients

100g Puff pastry
sugar
icing sugar

Method

  1. Preheat the oven to 180ºC. Line a baking sheet with a silicone baking mat or baking paper.
  2. Roll out the puff pastry to a rectangle about 30 cm x 20 cm x 5 mm thick. Sprinkle liberally with sugar and roll each of the long sides into the centre. Turn this long double log a quarter turn away from you, so it is standing on one side, and gently flatten it. Use a sharp knife to cut into slices about 1 cm thick.
  3. Roll the slices very lightly and lay them out on the prepared baking sheet, so the flat, swirly surface is facing upwards. Dust with icing sugar and bake for 8–10 minutes until the pastry is crisp, and caramelised a delectable golden brown.
